Step of making Sri Lankan hoppers
1. First mix rice flour, baking soda and thick coconut milk.
2. Keep that mixture on 4-5 hours before use.
3. After the rest of the coconut milk is added to get thick creamy mixture like single cream.
4. Take a good ladle full of the creamy batter.
5. Pour the batter into your wok and then swirl it around a few times to coat the sides.
6. If you want to add an egg or leave it out.
7. After about a few minutes, the sides will crisp and the bottom will be soft and spongy.
Ingredients
Finest rice flour 225g
Yeast 1 tsp
Sugar 2 tsp
Thick coconut milk 2 cups
Salt ½ tsp or as per taste
Water when necessary
